Smoked Salmon-
2nd (KING, fillet) and 3rd Place (Red, strips) (1st in 2010)
Rub: 2 lbs brown sugar, 1 cup sea salt, 1 teaspoon cayenne pepper, 1 teaspoon Ground Thyme, and 1 Teaspoon Ginger. Cut fish into fillets, or strips (strips can be w/ skin or w/o)
Set for 4 hrs then rinse thoroughly. Dry under a fan for several hrs (Very Important). Place in smoker, do not allow smoker to exceed 200 degrees.
Glaze with mixture of Honey, Ginger, and Currant or Raspberry Juice.
Smoke until reaches desired consistancy (approximately 4 hrs).

Appetizers-
Smoke Salmon and Artichoke Cheese Dip 1st Place
Mix 1 cup Mayonnaise, 1 cup Sour Cream, 1 cup Shredded Cheese (Parmesan or Asiago), 1/2 cup Smoke Salmon, pinch salt, 1 tsp Dill, 1 clove garlic, 1 tbs lemon juice, and 1/2 teaspoon Cayenne pepper.
Bake 20-30 minutes at 400 degrees until golden brown.
Salmon Cakes - 3rd Place
Cut fresh bread into 1/2 in squares and set aside for 30 minutes. Melt 4 Tbs of butter and combine with favorite cajun spices. Pour over bread and let sit for 15 minutes.
Cut Salmon int 1/2 inch squares and add to bread. Separate 4 eggs and reserves the whites. Mix yokes w/ fish and bread. Beat egg whites till stiff, fold into mixture.
Place small spoonfull (roll into ball) into hot oil/butter mixture. As it cooks, flatten gently, when golden brown flip.
Serve with Tarter or Rhubarb relish.

Spicy Ginger Teriyaki Salmon Stuffed with Thai Basil Corn Bread Stuffing - 1st Place
Cut Fillets into 2 inch pieces and cut in half. Season fish with salt and pepper. Mix corn bread stuffing with Thai basil, and your favorite Thai red pepper spices. Place both halves of the fish in hot pan, sear for 40 seconds, turn over spoon generous amount of stuffing between pieces of fish. Pour Teriyaki sauce over fish and place skillet in 400 degree oven for 10 minutes.
Serve with rice, fresh greens, top with pinapple, papaya, and Thai Basil.
